If those can be taken as definitive examples of the 'genres' in question, as far as I'm concerned I'm not missing out anyways.  Even if they are metal, then they're still just 'extreme metal with horrible vocals vomiting all over it'.  The discussion of how metal they are seems a bit moot.

Well, let's see:

Hellshock - some solid Death/Thrash
Skaven - That is some fairly badass Doom/Death with bad vocals
Buzzoven - Horrible punk noise
Wolfbrigade - decent Heavy/Thrash with bad vocals
Eyehategod - again, crappy groove metal with horrible vocals and not an idea to be seen anywhere.

So I would say one of those is pretty good, two are questionable, and two of them are awful shit that is not metal.  Do not confuse heaviness or a simple good guitar tone as equating to "Metal" because they do not.  You seem to have a decent ear for tone, and that is important, but it's more important what a band does with it, and none of these bands seem to be doing much at all.
