At Vance also do "The Winner Takes it All" by Abba, and a quality version of Rainbow's "I Surrender"

I'll also add;

Heathen - Set Me Free (Sweet)

Saxon covered "Set Me Free" as well, on Crusader.

For a little bit of a twist, check out The Tufts Beelzebubs and their A Capella version of Ozzy's "Crazy Train"

Thanks for all the tips! Some great stuff there, I'll use a lot of them. My favourite is still Slow Horse - Wicked Game I think, there aren't that many doom covers...

In Flames - Everything Counts (by Depeche Mode)

NanowaR do humorous covers of several metal bands (The Number of the Bitch, Master of Pizza...)

Turisas - Rasputin
Sonata Arctica - The Wind Beneath My Wings
Dream Evil - My Number One
Lord - On A Night Like This (Hilarious video clip)

Northern Kings do nothing but covers.  The Ten Masked Men are also good for a laugh as they do Death Metal covers of pop songs.
